Flowers are blooming, the sun is starting to show itself again and the need for chunky sweaters is no longer. Yes my friends it is the season of less clothes, less layers and showing more skin. No more hiding that layer of fat!! So bad to the diet, there is no magic pill fo losing weight fast but eating right can debloat you which will make you appear and feel thinner.
Today's recipe features Quinoa
1 Cup Quinoa rinse in cold water or it will taste like dirt
2 Cups of water
You can cook either on the stove top or the rice cooker2 Cups of Arugula
1/4 Cup of Low Fat Feta
2 TBS of Olives diced
2 Green Onions
1/2 to 1 TBS of Fresh Mint
1/2 Cup of Cherry Tomatoes
3 Diced Sweet Peppers
1 TBS of Olive Oil
2 TBS of Balsamic Glaze
Cook the Quinoa until all of the water is absorbed. Set aside and let cool.
When Quinoa is cool mix with the other ingredients let the flavors develope in the while in fridge.
